Holland America Dining Guide: Morimoto by Sea, Magnolia Bakery and What to Book Ahead
Plan Holland America dining by separating ordinary meals, extra-charge specialty experiences and dated seasonal offerings. Morimoto by Sea is not the same experience on every ship, and Magnolia Bakery’s announced Banana Pudding Bar is a once-per-cruise feature for the 2026-27 Caribbean season, not a daily dessert station on every itinerary. Confirm your ship and date before reserving around either name.
What is changing at Morimoto by Sea?
HAL’s September 14, 2026 release announced a refreshed Morimoto menu beginning its rollout that month on Nieuw Amsterdam. The rest of the fleet was expected to receive it by mid-November 2026. At this October 8 review, that timetable is an expected rollout, not proof that every ship already serves the new menu.
Nieuw Amsterdam has a standalone Morimoto by Sea restaurant. On the remainder of the fleet, the announcement describes a pop-up experience. That difference can affect which evenings are available and how you fit a meal around port days. Confirm the actual venue, menu, reservation times and extra charge on the sailing you want rather than assuming a nightly standalone restaurant.
The announcement names dishes such as Tan Tan Noodles, Miso Lamb Chop and Lobster Miso Soup alongside returning favorites. A menu preview helps you decide whether the style appeals to your party; it does not establish a fixed menu for all future voyages. If seafood is not your preference, review the available alternatives before committing to the reservation.
Ordinary dining and a specialty reservation are different purchases
Do not treat a specialty restaurant as a necessary upgrade to eat well on the cruise. Start by identifying the ordinary meals covered by your booked fare, then choose any extra-charge experience because you actually want it. We are not quoting restaurant prices here because the reviewed announcements do not establish a current charge for your exact departure.
Have It All’s specialty dining allowance also has boundaries. The reviewed US Early Booking Bonus terms allocate eligible dining by cruise length and ship, and exclude specialty dining events such as Morimoto by Sea. A package that includes a specialty dinner therefore does not mean the Morimoto experience is included. Ask which restaurant reservation the allowance covers and what your preferred meal would cost separately.
A useful reservation plan starts with one important meal, not a fully booked week. Consider whether a long excursion day will leave you wanting a formal reservation or a flexible dinner. If two travelers have different tastes, compare the actual menu before buying the experience for both.
Magnolia Bakery: a seasonal treat, not a daily guarantee
The September 24 release describes a Magnolia Bakery Banana Pudding Bar in Lido Market once per cruise on ships sailing the Caribbean during the 2026-27 season. It does not extend that schedule to Alaska, Europe or every later year. Do not choose an unrelated itinerary expecting the same offering.
Once-per-cruise means you should check the onboard schedule if the dessert is something you particularly want to try. It also means there is no reason to assume you can miss one serving and return to the same bar the next day. The reviewed announcement does not require a separately purchased Magnolia reservation, but confirm the onboard arrangements rather than treating all branded food experiences alike.
The May 2027 chef sailing is a separate decision
Chef Masaharu Morimoto is scheduled to join Nieuw Amsterdam’s eight-day Alaska roundtrip from Vancouver departing May 8, 2027. That is a specific announced sailing, not an appearance on every Morimoto-equipped ship. The announcement alone is not a guarantee of a particular demonstration, private dinner or one-on-one meeting.

Dietary needs belong in the planning conversation
If anyone in your party has an allergy or dietary restriction, tell our team before choosing a specialty experience and confirm arrangements directly with the ship’s dining staff. A dish name or a marketing menu is not an allergen guarantee. Keep the question specific to the restaurant and meal you intend to reserve.
